I am now taking Coumadin and just learning what's okay and not okay. Is it okay to include the combination of fresh ginger and fresh garlic in stir-fry cooking?
Sure. In the amounts you're likely to use, both of these are going to be safe and a great addition to your stir-frys.
You can find out the nutritional content of any ingredient by logging into The USDA Food Composition Database and doing a search on your desired ingredient. You will find the Vitamin K content of the food under "Full Report (All Nutrients) by scrolling down to "Vitamins."
If Vitamin K is not listed under "Vitamins" then there is not enough Vitamin K to be measured.
Thanks for writing.
