Roasted Vegetable Medley

Ingredients
| 1 medium White or yellow onions (cut into wedges) |
| 1 bunch Broccoli, raw (cut into florets) |
| 1 head large (6-7 inch dia.) Cauliflower, raw (cut into florets) |
| 2 medium Carrots, raw (ct 1/4" half moons) |
| 2 Tbsp. Olive oil |
| 1/4 tsp. Salt |
| 1 dash Black pepper (to taste) |
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, toss all ingredients. Mix well.
Spread the vegetables in a single layer on a baking sheet. Bake in the oven for 20-25 minutes, or until the vegetables start to brown on the edges.
