Good fresh tomatoes are not always available. Can I substitute canned tomatoes for fresh on the Coumadin diet?
For almost any recipe you'll find that canned tomatoes work just as well as fresh.
You can keep both the 15 ounce cans and the 28 ounce cans of diced tomatoes on hand.
A 15 ounce can is about 1 1/2 cups of tomatoes, and that's equivalent to around 3 small tomatoes. There are a lot of great brands on the market, but some do have added salt and often added ingredients, like basil, garlic, or oregano, so check the label.
One cup of fresh, diced tomatoes will contain about 14.2 mcg of Vitamin K, according to the USDA, while one cup of canned tomatoes contains 7 micrograms. Why the discrepancy? A cup of canned tomatoes likely contains more water than a cup of chopped tomatoes. Keep that in mind if you are tracking your Vitamin K intake by the microgram.
